Espresso water cheat sheet: what to put in your machine

Water is most of every shot, and hard water is the top reason home machines need repair. Here is the one-screen version: what to use, what to avoid, and when to descale.

The short answer

  • Best: distilled water with an espresso mineral packet. Same water every time, little scale.
  • Good: filtered tap water if your tap is soft. Get a free hardness test strip from your machine box or a pool store.
  • Avoid: plain distilled or reverse-osmosis water with no minerals. Some machines use water to sense the tank level and many makers say not to use it. Check your manual.
  • Avoid: water from a salt-based softener. It stops scale but adds sodium and tastes flat.

Hardness at a glance

Your tap (hardness)What to do
Soft (under about 50 ppm)A pitcher or tank filter is enough. Descale per the manual.
Medium (about 50 to 150 ppm)Tank filter, change it on schedule. Descale more often than the manual minimum.
Hard (over about 150 ppm)Switch to distilled water plus a mineral packet. Filters alone will not keep up.

Ranges are rules of thumb, not a lab spec. Your machine manual wins if it says something different.

Descale signs

  • Shots run slower with no grind change.
  • The steam wand is weaker or sputters.
  • White crust on the shower screen or drip tray.
